Brooklyn Breakfast Shop, the popular south Austin food truck founded by Chef Ryan Rosen, is expanding operations to open a location up north for his hungry fans across town! Soon central and north Austinites will be able to treat themselves to a fresh, Brooklyn Breakfast Shop meal right out of the new commercial ghost kitchen at Prep ATX on Anderson Lane. Rosen is hoping to open in mid-July. Not only that, but the new location will include dinner hours along with the breakfast and lunch options. 

Rosen’s inventive food hits the high notes with a creative, New York inspired menu and through his partnerships with local farms and other local businesses, such as Shirttail Creek Farm and Rosen’s Bagel Co. Sample menu items will make you drool: a breakfast sandwich with fennel sausage, house-made pickles, pimento cheese, and a sunny side up egg on a biscuit. Then there’s the citrus roast pork sandwich, served on a fried plantain with avocado, pickled red onions, cilantro aioli, and a sunny egg. Rosen also regularly sells out with these offerings, and the monthly French toast and chicken sandwich. 

What’s even more exciting about the new location is that Rosen’s menu at the Prep ATX location will double in size! In addition to menu standards like his breakfast sandos, avocado toast, sweet potato hash, Rosen will expand his menu to include a smash burger and roast beef sandwich. While Rosen will still keep the popular monthly chicken sandwich and French toast specials, he is adding on two buttermilk chicken sandwiches, as staple menu items, much to his customers’’ excitement. These are “The Jessica” and “Sweet Heat.” If you know you know, as these sandwiches have their fans. If you don’t know, make plans to check out the new Brooklyn Breakfast Shop Prep ATX location! 

 Brooklyn Breakfast Shop quickly grew in popularity when Rosen opened the food truck in 2019, initially at The Yard, but later at the Thicket food truck park at 7800 S. 1st (near Dittmar). Rosen’s fans followed him from his previous role at The Peached Tortilla, surely sensing he’d bring that same dedication to fresh, real, and local ingredients, cooked up into some yummy creations with interesting flavors and combinations. 

Rosen’s signature dishes at Brooklyn Breakfast Shop include mouthwatering breakfast sandwiches–oozing with only the brightest yolks from farm-fresh eggs and tasty sauces or other ingredients like pimento cheese, stuffed and loaded French toast specials that involve seasonal ingredients–or possibly whatever strikes Rosen’s fancy that week, and greatly anticipated chicken sandwiches of the month–often with a spicy twist! We’re really excited to see his success and expansion. Can’t wait to check out his new ghost kitchen.
